This is another super easy recipe that can be prepped ahead and that feed the masses!! The marinade is very easy… its a combination of Cumin, Garlic powder, Oregano, Turmeric, Salt, Pepper, Lime Juice, and Water.  All you need to do is whisk the ingredients together and VOILÀ! Marinade done. And to be honest, that’s as complicated as this recipe gets.

Once you’ve whisked together the marinade all you need to do is pour it over your chicken, cover your baking pan with aluminum foil, and bake it for about 2 or 2.5 hours. Once its in the oven, you just need to set a timer and forget about it! Easy right?

When your timer goes off, uncover the baking pan and set your oven to broil. Once your oven is hot enough, place your chicken back in the oven so that the skin can get brown and crispy. This should only take a few mins, maybe even less depending on how strong your oven broiler is.

When I make this recipe, I make enough for my family of 6, PLUS some. The extra is normally used for prepped lunches or repurposed into other meals like salads and burrito bowls etc..

This recipe calls for about 6 lbs of chicken, which is about 28 drumsticks. I normally calculate about three drumsticks per person,  so this recipe serves about 9 people.

I love to pair this with jasmine rice or cauliflower rice & some sort of grilled vegetable. (Asparagus is normally my go-to)

Ingredients

Marinade

  • 1.5 tsp cumin
  • 1 tsp dry oregano
  • 1 tsp garlic
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 cup lime juice ~ 3 limes
  • 3.5 cups water

Chicken

  • 6 lbs chicken drumsticks ~28 pieces

Instructions

  1. Preheat over to 350F. 

    Whisk together marinade ingredients. 

  2. Arrange the drumsticks in a suitable baking pan. 

    Pour marinade over the chicken and cover the baking pan with aluminum foil. 

  3. Set a timer, and bake at 350F for about 2 - 2.5 hours. 

  4. Once the chicken has finished baking, uncover the baking sheet.

     Set oven to broil, and place oven back in the oven for 1-2 mins, or until skin reaches desired crispy-ness.
