 Cucumber & Cilantro Salsa

Here are three of my go-to fresh summer salsas! They can be added on to so many different dishes or simply served with a side of chips! These three summer salsas are a staple at my house! 

All of these salsas are seasoned very simply, with either fresh herbs, S&P, and olive oil/or lime juice. Simple seasonings allow you to really showcase your fresh ingredients! All three of these salsas are healthy and can be implemented into your weekly meal preps.

Fresh Italian Tomato Salsa

This salsa is super simple. To season, I use a mixture of fresh oregano and basil, coarse sea salt, fresh cracked pepper, and olive oil.  This salsa takes me back to a trip I took to Italy in May of 2015.  Most of the food we ate in Italy was very simple. Most of their dishes weren’t drenched in heavy sauces or covered in cheese, instead they showcased their ingredients with really simple seasonings. Their pastas were fresh and seasoned with some AMAZING olive oil, salt, pepper and a little parmesan. Since then, I try to apply that same philosophy..

My grocery store has been bringing in some really great greenhouse farmed cherry tomatoes and they work great for this salsa. These tomatoes can be served on toasted baguette slices or even as a topping to lunch/breakfast bowls.

Fresh Summer Salsas - Italian Tomato - Peruvian Salsa Criolla - Cucumber & Cilantro Salsa

Fresh Italian Tomato Salsa

Prep Time 10 minutes

Ingredients

  • 2 cups cherry tomatoes , chopped
  • 2 tbsp basil , finely chopped
  • 2 tbsp fresh oregano , finely chopped
  • Kosher Salt , to taste
  • Fresh cracked pepper , to taste
  • 2-3 tbsp extra virgin olive oil

Instructions

  1. Chop tomatoes, basil, and oregano. 

    Season with salt/pepper and olive oil. 

    Mix until evenly combined. 

  2. Can be made ahead of time or can be served immediately. 

Note: I’m not entirely sure how long this will keep in the fridge. It never lasts more than a day and a half here.

 

3 Fresh Summer Salsas - Fresh Italian Tomato, Peruvian Salsa Criolla, Cucumber & Cilantro Salsa - A Different Bite

Peruvian Salsa Criolla

Salsa Criolla is made weekly at my house. It goes well on just about anything. Chips, fish tacos, salads, eggs, lentils, and brightens up any and all leftovers. This summer salsa is made with finely diced red onions, aji amarillo (Peruvian yellow pepper), and tomatoes and is seasoned with salt, lime juice, and olive oil. The key to this salsa is to 1.)  Dice everything finely &  2.) Allow the salt and lime juice to pickle onions (30-45mins). Both of my parents were raised in Peru and their influence is very apparent in my cooking.  My dad is actually the one who showed me to make this salsa; we have a special bond when it comes to the kitchen. We spend most weekends cooking together and experimenting with new recipes. ?‍?❤️

Note: The Aji Amarillo pepper can be found in most hispanic food stores (frozen). I happen to have the plants in my back yard because we use it so often. But in Lakeland, Florida you can find them frozen at Tapatillos.

Peruvian Salsa Criolla

Prep Time 10 minutes

Ingredients

  • 1 medium, red onion , finely diced
  • 1 Aji amarillo pepper , finely diced
  • 1/2 cup tomatoes ,diced
  • 1/2 Lime
  • 2-3 tbsp extra virgin olive oil
  • 1-2 tsp Kosher salt

Instructions

  1. Add finely diced onion, pepper, and tomatoes to a medium bowl and season with lime juice and salt. Mix throughly and let rest for 30-45 mins. 

  2. Add EVVO and mix. 

    Serve immediately or save for later! 

    Will keep for about 3-5 days. 

 

Cucumber & Cilantro Salsa

The last of the three summer salsas is the Cucumber & Cilantro salsa! This one is also very versatile, its great on salads, on top of my 30 min Chicken Curry, and it mixes really well the Peruvian Salsa Criolla. By it’s self its great! But I decided to combine some leftover Salsa Criolla and the Cucumber salsa to make a really refreshing snack to enjoy with some pita chips at the beach. It was ??????.

Cucumber & Cilantro Salsa

Prep Time 10 minutes

Ingredients

  • 2 cucumbers , diced
  • 1/2 cup cilantro , finely chopped
  • Kosher Salt
  • 1/2 Lime , juiced
  • 2 tbsp Extra Virgin Olive Oil

Instructions

  1. In a medium bowl, combine all of the ingredients and serve immediately
